Like all of our Traditional Cheddar range, these mini truckles are wrapped in cheesecloth to mature naturally. Usually made at the start of the year, they are just reaching their prime by mid-November.

You can enjoy it straight away or for the really traditional cheddar look, take it out of the vacuum packaging and let it mould up for a while – particularly 1 to 2 months. Keep it in a cool dry place ideally 12 degrees. Wipe over with a dry cloth every week and watch your cheddar mature before your eyes.
There will be some mould on the outside cloth of your cheddar, don’t worry this is natural! Your cheddar cheese will form a rind that will protect the cheddar inside. All will be edible apart from the cloth.
