Introducing Curd’ve Been – a 5kg bag of not-quite-curd, not-quite-cheese, created entirely by accident when our cheesemaker Steve (who was having a bit of an off day) missed one crucial step: adding the starter.
No starter means no acidity, no aging potential, and no transformation into cheese. This curd won’t mature. It won’t sharpen. It won’t become anything other than what it already is.
But here’s the surprise: it’s still perfectly safe, oddly delicious, and weirdly versatile. The texture? A little different from our classic curd – softer and crumblier and maybe a touch milky.
It’s not what we planned. But it might just be what your kitchen didn’t know it needed.
